Originally I was going to use cucumbers for this salad, but there were none in stock, surprisingly. So I thought what else is juicy with a nice bite, and for some reason cantaloupe popped into my mind and it works really well because it brings sweetness to the salad.
1 Cantaloupe, peeled, seeded and sliced into bite sized pieces
1 12 oz bag of frozen, shelled edamame (soy beans), thawed
1 tbsp pickled ginger, roughly chopped
1 scallion, green only, sliced
1 red bell pepper, sliced
1 Tbsp rice wine vinegar
1 Tbsp dark sesame oil
1 Tbsp tamari or soy sauce
Toss everything together and give it a taste. Adjust the seasonings as needed. Set aside for a few minutes to allow the flavors to meld or serve immediately. Easy right?
